Simple, fresh, and bursting with flavor, Margherita Pizza is the essence of Italian cuisine. With just a handful of high-quality ingredients — soft mozzarella, ripe tomatoes, fresh basil, and a perfectly crisped crust — this pizza celebrates the colors and flavors of Italy.
This homemade version makes two 12-inch pizzas and takes about 2 hours (including dough resting time), making it a rewarding weekend meal or show-stopping dinner party centerpiece.
Ingredients
For the Dough:
- 500g all-purpose or “00” flour
- 325ml warm water (around 35°C / 95°F)
- 7g instant yeast (or 2.5g active dry yeast)
- 10g salt
- 5–10ml olive oil (optional)
For the Toppings:
- 300g peeled San Marzano tomatoes (or high-quality canned)
- Salt to taste
- Fresh basil leaves (8–10 per pizza)
- 250g fresh mozzarella (preferably buffalo mozzarella)
- Extra virgin olive oil
Instructions
1. Make the Dough
In a large bowl or stand mixer, combine flour and yeast. Gradually mix in warm water until the dough starts to form. Add salt and knead for 10 minutes until smooth and elastic. If using, add olive oil during the last few minutes for a softer crust.
2. First Rise
Place the dough in an oiled bowl, cover, and let rise in a warm place for about 1 hour or until doubled in size.
3. Prepare Tomato Sauce
Crush the tomatoes by hand or lightly blend them in a bowl. Season with a pinch of salt and set aside.
4. Shape the Dough
Punch down the dough and divide into two equal portions. On a floured surface, gently stretch each into a round shape without using a rolling pin for best texture.
5. Assemble the Pizza
Preheat your oven to its highest temperature with a pizza stone or steel inside if available. Place shaped dough onto a pizza peel or baking sheet lined with parchment paper. Spread a thin layer of tomato sauce over the dough, then arrange mozzarella slices evenly on top.
6. Bake the Pizza
Transfer the pizza to the oven and bake for 8–12 minutes, until the crust is golden and slightly charred.
7. Finish with Basil
Once out of the oven, immediately top with fresh basil leaves and drizzle with extra virgin olive oil.
8. Repeat
Repeat the process with the second pizza.
